Impossible to share with you a French recipe from Alsace without a recipe from Lorraine!
These two cities are side by side, also with Germany. Their history is complex: because of war, they were German, then French, then German, then French...
Alsace and Lorraine didn’t like too much each other for some reasons belonging to the past, that’s why i choose to reunite them with these 2 pie recipe :D
I must also do honor to my Lorraine origins, obviously
Both have two ways to cook a french pie. One with onions, other one with meat.
La quiche Lorraine is the most famous pie in France, my mum used to cook it at least one per week.
If you are vegetarian you can put some smoked tofu instead of bacon.
List of the ingredients
For the dough:
250 grams of flour
100 grams of soft butter cut into pieces
1 teaspoon of salt
8 centiliters of water
For the mixture:
3 eggs
2 big spoon of sour cream (20 cl)
20 centiliters of milk
1 teaspoon of nutmeg
2 pinch of salt, 2 pinch of pepper
200 grams of bacon or smoked tofu
Recipe:
. Preheat the oven at 180°
. For the dough, add all of the dried ingredients in a bowl, knead the dough with your hands and add the water. Do it again until having a compact ball. Keep it for later.
. Take a new bowl and wip 3 eggs. Add the milk, the sour cream, the nut meg and salt/pepper.
. In a pan, put your bacon and fried it during 5 minutes.
. Take a pie dish, put on baking paper, and roll the dough with your hands.
. When it’s done, put the bacon then add the mixture.
. Put in the oven during 45 minutes.
Pie is ready to eat!
