~MELDAS BULGUR SALAD~




When I first tried Meldas bulgur salad, I was really surprised, because usually, I am not a big fan of salad. But this salad was amazing. I really loved it and she gave me her recipe. It is super easy, delicious and perfect for barbecues or brunches with friends. 

Ingredients: 
- bulgur (you can find it in Maxima) 
- boiled water
- 2-3 tbsp tomato paste 
- 1/2 paprika 
- 1 tomato (- 1 small onion additional) 
- spring onion 
- parsley 
- 1/2 lemon 
- salt, pepper and ground cumin


Preparation:

  1. Place the bulgur with some salt in a pot and cover it with boiling water. Let it sit till the bulgur gets soft. If there is leftover water, just pour it away.
  2. Cut the paprika, tomato, (onion), spring onion and parsley in small pieces. 
  3. Mix the soft bulgur with the tomato paste. Add the chopped vegetables. 
  4. Season the salad with salt, pepper, grounded cumin and lemon juice. 

PS: You can add more vegetables to the salad if you want. Also it tastes good with some feta as topping :)
