~CHILI SIN CARNE~
Chili sin Carne or should I simply say "vegetable stew"? Because I got this recipe from a german friend, so it is not really original :)
But anyway it tastes delicious! It is easy to make and it contains a looot of vegetables. Skanaus!
Ingredients:
- 1 onion
- 2 garlic cloves
- 3 tablespoons olive oil
- 250 g potatos
- 200 g red lentils
- 900 ml vegetable broth
- 2 cans kidney beans (à 425 ml)
- 1 can corn
- 500 g chopped tomatos
- salt pepper chili powder paprika powder
- chives or parsley
Preparation:
- Chop the onion, press/mince the garlic, peel and cut the potatos in pieces. Then heat the olive oil in a big pot and stew the onion and the garlic. Add potatos and let them stew shortly.
- Add the red lentils and the vegetable broth and let it boil for 20 minutes.
- Pour in corn, drained and rinsed beans and chopped tomatos. Let it boil. Then season it with salt, pepper, chili powder and paprika.
- Serve with chopped chives or parsley. Enjoy!
