~CHILI SIN CARNE~





Chili sin Carne or should I simply say "vegetable stew"? Because I got this recipe from a german friend, so it is not really original :) 
But anyway it tastes delicious! It is easy to make and it contains a looot of vegetables. Skanaus!





Ingredients:
- 1 onion 
- 2 garlic cloves 
- 3 tablespoons olive oil 
- 250 g potatos 
- 200 g red lentils 
- 900 ml vegetable broth 
- 2 cans kidney beans (à 425 ml) 
- 1 can corn 
- 500 g chopped tomatos 
- salt pepper chili powder paprika powder 
- chives or parsley

Preparation:
  1. Chop the onion, press/mince the garlic, peel and cut the potatos in pieces. Then heat the olive oil in a big pot and stew the onion and the garlic. Add potatos and let them stew shortly. 
  2. Add the red lentils and the vegetable broth and let it boil for 20 minutes. 
  3. Pour in corn, drained and rinsed beans and chopped tomatos. Let it boil. Then season it with salt, pepper, chili powder and paprika. 
  4. Serve with chopped chives or parsley. Enjoy!
